A secret I discovered that will make you enjoy carbs, tricking your brain but eating less of them at the same time.

Couscous with red peppers, egg plant, onions, green beans grated garlic and (a diced potato optional) and some chicken

So, am sure you are now confused. Don’t be. Do you like rice, couscous, pasta and all the good staff but are afraid of not maintaining that waistline? Firstly, this is not a “diet” or obsessive calorie counting.

The trick to enjoying these carbs is by adding vegetables. You do a ratio of one as to one. Like if you want rice, you cook half of your normal portion and the other half you had vegetables of your choice. Am talking of green pepper, red pepper, carrots, sweet corn, onions, green beans, garlic, ginger whatever that takes your fancy. All you have to do is put vegetables that have similar tastes together.

For example, carrots go well with sweet potatoes, they both literally taste sweet. Onions when stir fried have a sweet caramel taste to them. My last successful attempt at this was in the couscous I made. I cooked couscous.

What you do is you cook your rice or couscous normally in the traditional way like in a normal pot.

Then you take a non-stick pan you stir-fry your vegetables. When your vegetables are cooked you add your starch for the day.

You will find that the vegetables take a lot of space, and the meal will be more filling.

In the picture you will see that I diced some

red peppers, green beans, onions, egg plants, a potato

I started off with the diced potato, then stir fried some onions, green beans and an egg plant. Once they were cooked, I added the red pepper last, because it shouldn’t over cook. When I was done with my vegetables, I added the couscous, I put a pinch of sea salt and black pepper.

And Voilà
